The crunchy candy-making of Xiejiaji Town in Fuyang can date back to 200 years ago. The sweet candies are still made by hand.
It usually takes a dozen hours to go through over 10 steps including steaming sticky rice, fermenting, boiling sugar, stretching sugar and coating sugar with sesames to make the candies.
The malt and sticky rice are fermenting in a large wooden bucket.
The door of the workshop should never be opened while making the crunchy candy in order to preserve the heat. The steam pervades the room.
