Stewed fish head in pottery pot of Wanfo Lake is a dish many locals would recommend to visitors in Hefei and Lu’an.
The fish is bighead carp caught from the Wanfo Lake, a large reservoir rich in fresh water fishes especially bighead carps. The fried fish head should be stewed in a pottery pot for at least half an hour before one can taste the milky soup and tender fish. Besides the fish, the water and seasoning are also key to the taste.
Surrounded by mountains, the Wanfo Lake with clear water and rich natural feed is ideal for the growth of bighead carps. Apart from stewed fish head, one can also enjoy other fish dishes such as steamed fish head with chopped hot pepper, braised fish pieces and sweet and sour fish pieces.
